It’s a cliche to say that breakfast is the most important meal of the day, right? Well, I wholeheartedly live by it anyway. And it’s not because of the phrase. It’s because my body tells me.
If I have nothing but a sugary meal for breakfast, within a few hours I’m crashing hard. My energy starts to plummet and I start to shake.
But when I fill up on healthy whole grains and protein, I am good for hours. It makes a huge difference.
But you don’t always… or ever… have time to make a big, healthy meal for breakfast.
That’s why I like quick and easy options like these.

Boiled Egg BLT
Aside from eggs, my favorite breakfast food is bacon. I don’t indulge in it often but when I do, I usually buy turkey bacon, which has fewer calories, fat, and sodium and can pack in more protein.

For this boiled egg BLT:
- Toast 2 pieces of whole wheat bread.
- Layer on 1 large piece of romaine lettuce, 2 slices of cooked bacon, 1 hard-boiled egg (sliced thin), 1 large slice of tomato.
- Season with salt & pepper.
You may notice, my sandwich is missing the tomato. I personally prefer more of a BLE (bacon, lettuce & egg, hold the tomato). 🙂 It’s up to your preference.

Loaded Avocado Toast
Avocado toast is one of my favorite go-to’s for breakfast and I like to pile lots of good stuff on it.

For this loaded avocado toast:
- Toast 1 piece of whole wheat bread.
- Scoop out half of an avocado and spread it on the toast.
- Layer with crumbled feta cheese, 1 hard-boiled egg (sliced thin), and bits of cooked bacon.
- Season with salt & pepper.
There are so many delicious variations of avocado toast but I always include feta cheese and salt and pepper to help balance the thick, creamy texture and taste of the avocado.

Granola Goodie Bowl
Granola is pretty much my go-to in a lot of situations including breakfast and mid-day and late-night snacks. I prefer to buy organic options with whole grains and natural sweeteners, or I make my own.

The concept of this bowl is to add granola and whatever other healthy add-ins make you happy. 🙂 All in one bowl makes it easy to make and eat on a busy morning. For my bowl I added:
- 1 cup oats & honey organic granola
- 2 strawberries, sliced
- Small handful of blackberries
- 2 hard-boiled eggs
